Starbucks Australia Reveals New Spring Menu with Pistachio Drinks, Pumpkin Spice and a Black Cat Frappuccino
Starbucks Australia has revealed a sizeable new spring menu for 2026, with pistachio becoming one of the biggest flavours across its drinks and food range.
The seasonal lineup includes new Pistachio Flavoured Lattes, Pistachio Matcha drinks, Pistachio Hot Chocolate, an Apple Camellia Iced Garden Tea and a Pistachio Donut, while Pumpkin Spice is returning in several formats. Starbucks is also preparing a limited Halloween range led by a new Black Cat Frappuccino.
Not every product has been given the same launch date. Starbucks has confirmed that its Pumpkin Spice range returns on Tuesday, September 8, 2026, while the Black Cat Cookie has a specifically advertised October 20 to October 31 window. Exact start and finish dates for several of the other spring products have not been published, so those shouldn’t be assumed.

Pistachio Is Taking Over the Starbucks Spring Menu
The biggest new flavour across Starbucks Australia’s spring menu is pistachio, which is being used across coffee, matcha, chocolate, cold foam and bakery products.
The new Pistachio Flavoured Latte combines Starbucks espresso with a white chocolate pistachio flavour and your choice of milk. Starbucks has not published national pricing for the drink in its launch announcement, so prices may need to be checked once the products appear on individual store menus.
Starbucks is also introducing a Pistachio Flavoured Matcha Latte. The drink combines the same white chocolate pistachio flavour with matcha and can be ordered hot, iced or as a Frappuccino.
If you don’t want coffee or matcha, you’ll also be able to get the flavour through Starbucks’ chocolate range. The Pistachio Flavoured Choc can be ordered as a hot chocolate, iced chocolate or blended Frappuccino, with the Frappuccino finished with whipped cream and chocolate sauce.
There’s a New Apple Camellia Iced Garden Tea
One of the more unusual additions is the Apple Camellia Iced Garden Tea.
Starbucks says the drink combines green tea, Fuji apple flavour and camellia sauce, before being finished with a dried rose garnish.
Unlike the pistachio drinks, this one moves away from the richer dessert-style flavours that dominate much of the seasonal menu and provides a fruit and tea-based alternative.
Starbucks has not announced an end date or national price for the Apple Camellia Iced Garden Tea in its current spring-menu information.
Pumpkin Spice Returns on September 8
Starbucks has separately confirmed that Pumpkin Spice officially returns to Australian stores on Tuesday, September 8, 2026.
The familiar Pumpkin Spice Latte is returning, but you’ll have considerably more ways to order the flavour this year.
Starbucks says its Pumpkin Spice classics will be available as a hot Latte, Iced Latte, Frappuccino and Cream Frappuccino.
Cold-drink options expand the range further, with Pumpkin Spice also available as an Iced Shaken Espresso, Cold Brew and Nitro Cold Brew. Nitro Cold Brew availability can vary because it isn’t offered at every Starbucks location.
Pumpkin Spice Is Coming to Matcha Too
The 2026 Pumpkin Spice range also crosses over with Starbucks’ growing matcha menu.
You’ll be able to get a Pumpkin Cream Matcha Latte hot or as a Pumpkin Cream Matcha Iced Latte, with matcha topped by Pumpkin Spice Cold Foam.
There is also a completely new protein-focused option.
Starbucks has announced a Matcha with Protein Boosted Milk and Pumpkin Protein Cold Foam, combining its matcha with the chain’s newer protein milk and cold foam range.
The company has not published a national price for the new protein Pumpkin Spice Matcha in the announcement.
Pistachio and Pumpkin Spice Cold Foams Are Coming for a Limited Time
If you would rather customise your regular drink instead of buying one of the seasonal recipes, Starbucks is also introducing Pistachio and Pumpkin Spice Cold Foam.
Both are explicitly described by Starbucks as limited-edition Cold Foams.
That means you’ll potentially be able to add the seasonal flavours to other compatible Starbucks drinks rather than sticking to the advertised spring combinations.
Extra customisations at Starbucks can carry additional charges, so the final price will depend on your base drink, size and any additions.
There’s Also a New Pistachio Donut
The spring update isn’t limited to drinks.
Starbucks is launching a Pistachio Donut filled and topped with pistachio flavour and finished with pieces of pistachio.
A Pumpkin Spice Cookie is also joining the range, giving you another way to get the returning seasonal flavour without ordering one of the drinks.
For a higher-protein snack, Starbucks is adding Chocolate and Pistachio Protein Crispies, which the company says contain 5g of protein per serve.
Again, Starbucks has not included national prices for these products in its spring announcement.
Starbucks Is Launching a Black Cat Frappuccino for Halloween
The most distinctive product revealed in the spring announcement might arrive a little later.
Starbucks has created a new Black Cat Frappuccino for Halloween, combining raspberry, blackcurrant and dark mocha sauce.
It’s finished with whipped cream and dark mocha drizzle before getting the feature that gives the drink its name: edible chocolate cat ears and a tail.
Starbucks describes the drink as a limited-time Halloween product but hasn’t provided an exact Black Cat Frappuccino availability period on its spring-menu page.
That distinction matters because the accompanying Black Cat Cookie does have confirmed dates.
Black Cat Cookie Is Available October 20 to 31
Starbucks has confirmed that the matching Black Cat Cookie will be available from October 20 until October 31, 2026.
The cookie is being promoted as a companion to the Black Cat Frappuccino.
It would be reasonable to expect the Frappuccino to appear around the Halloween period as well, but Starbucks has not published the same October 20 to 31 dates for the drink, so we’re not treating that window as confirmed for both products.
Most of the New Spring Menu Is Limited Time Only
Starbucks describes the new spring drinks and snacks as seasonal and limited time, rather than permanent additions to its Australian menu.
There isn’t currently one published expiry date covering the entire collection. Availability may therefore differ between products and stores, particularly as individual ingredients sell through.
Starbucks says the seasonal drinks can be ordered from participating locations and through its app when available.
When Can You Get the New Starbucks Spring Menu?
The wider spring menu has now been officially revealed and includes:
- Pistachio Flavoured Latte
- Pistachio Flavoured Matcha Latte, including iced and Frappuccino versions
- Pistachio Flavoured Choc, including hot, iced and Frappuccino versions
- Apple Camellia Iced Garden Tea
- Pistachio and Pumpkin Spice Cold Foams
- Pistachio Donut
- Pumpkin Spice Cookie
- Chocolate and Pistachio Protein Crispies
- Black Cat Frappuccino
- Black Cat Cookie, available October 20 to 31
- Returning and new Pumpkin Spice drinks from September 8.
For now, September 8 is the date to remember if you’re after Pumpkin Spice, while the pistachio-heavy spring range and Halloween products give Starbucks several more limited-time launches to follow through the next couple of months.
